Welcome to the SevenRooms Fab Five. Here, we spotlight what some of the most innovative operators in the world are doing to make their businesses stand out from the crowd. Each month, we share inspiring examples of SevenRooms clients leveraging our technology to boost revenue in creative ways.
November 2022 Edition
Searcys Helix Restaurant at the Gherkin (London, England)
Take one stunning view of Bangkok’s Chao Phraya River, add two Michelin stars and garnish with a dozen roses, macarons or handmade chocolates to take home after one of Chef Alain Roux’s luxurious tasting menus. It all adds up to drive meaningful prepaid revenue for the restaurant and create unforgettable experiences for their guests.
Kin Toh by Azulik (Tulum, Mexico)
This eco-resort is one of the most sought-after destinations in the entire Caribbean, and its treehouse restaurant set in the Mayan jungle is among the most unique dining locales on the planet. By enforcing a reservation deposit of $1,000 MXN (~$50 USD) per person, the team is able to curb no-shows and late cancellations, making sure they aren’t left with an empty nest.
Refinery Rooftop (New York, NY)
The savviest operators know that it’s never too early to start planning a proper New Year’s Eve celebration. At this popular Manhattan rooftop bar, rowdy revelers will be able to ring in 2023 with party packages up to $350pp that include bottle service, hors d’oeuvres, DJ sets, a live feed of the Times Square ball drop and a Champagne toast at midnight.
Twenty-one may be the legal drinking age in the US, but measured in hospitality years, it’s more akin to a bicentennial. This Windy City-based group will commemorate this milestone anniversary with a good old-fashioned pub crawl between a handful of their twelve venues. Big cheers to our friends at Four Corners.
The Duck & The Peach (Washington, D.C.)
Cross-selling is a great way to redistribute surplus demand at one venue to others within your group, keeping more bookings “in the family.” This Capitol Hill New American restaurant has customized the language in their white-labeled reservation widget to both inform guests about—and drive guests to—their adjacent cocktail bar.
The Garden (Las Vegas, NV)
Our hospitality partners are always only a few clicks away from creating and marketing special experiences, and this intimate LGBTQ bar and lounge in Las Vegas’ Arts District has taken full advantage. With their events widget configured to sell tickets to drag bingo, bottomless brunch and more, The Garden is driving prepaid revenue by day and by night.
Yolan at The Joseph (Nashville, TN)
At this Marriott property in Nashville’s vibrant SoBro neighborhood, this Italian fine-dining concept offers premium F&B experiences to match the luxurious hotel digs. Swankiest among them is a kitchen table where Michelin-starred chef Tony Montuano’s team will craft a bespoke tasting menu with premium wine pairings for $467 per person.
Boulevard Pool at The Cosmopolitan (Las Vegas, NV)
Summer may technically be over, but the daybeds, cabanas and private terraces at this Vegas rooftop pool are always in season. While these reservations come with substantial minimum spends, deal-seekers can also choose to kick off their weekend by adding themselves to the free guest list for the hotel’s famous Sunset Cocktail Hour.
Pagoda Chinese Restaurant (Bangkok, Thailand)
To celebrate this year’s Mid-Autumn Festival, Pagoda Chinese Restaurant at Bangkok’s Marriott Marquis Queen’s Park is leveraging SevenRooms’ white-labeled event widget to process pickup orders for handcrafted mooncakes in an array of flavors. With gift boxes ranging from ฿199 to ฿1,888 (approx. $5–$52 USD), the venue is driving meaningful incremental revenue in the weeks leading up to the holiday.
Beach Plum Farm (West Cape May, NJ)
Established in 2008, Beach Plum Farm is a 62-acre working farm with a market, restaurant and guest cottages. Turning to SevenRooms to help merchandise unique offerings across the property, they promote experiences ranging including flower arranging courses, archery classes and farm-to-table dinners, all from a single unified landing page.
Aura Skypool Lounge at The Palm Jumeirah (Dubai, UAE)
Northern Chinese fine dining concept Hutong offers just 5 nightly reservations for its “Flaming Duck”—a theatrical tableside presentation of their Peking duck. Feeding up to 6 people and costing $125, this offers a great example of pre-selling limited-availability or large format menu items.
MONO by Ricardo Chaneton (Hong Kong)
The team at Latin American chef’s counter, Mono, uses SevenRooms’ Offers directory to allow guests to choose between different tasting menu options at lunch and dinner. By requiring reservation deposits up front, they are also able to keep cancellation and no-show numbers down.
German beer bar and restaurant Brotzeit addresses a common situation in a thoughtful way: a guest tries to book a specific date, time and party size, but the location they’re looking at shows no availability. In many situations, this could be a dead end. Not here: utilizing the cross-selling capabilities of SevenRooms’ white-labeled reservation widget, they display inventory across four locations at once, encouraging crossover bookings and keeping more business within the group.
Long Meadow Ranch (St Helena, CA)
The legendary Napa Valley winery Long Meadow Ranch also runs a restaurant, cafe, general store and farmer’s market in scenic St. Helena. As our in-depth case study revealed, they have significantly boosted revenue by leveraging SevenRooms to merchandize unique experiences across the property. Days ago, they kicked off a live fire cooking guest chef series, with our fully integrated event management tools running in the background so they can focus on making the night magical for their guests.
Rockpool Bar & Grill (Perth, Australia)
Rockpool Bar & Grill is perhaps the most well-known concept within Australia’s mega-successful Hunter St Hospitality group, racking up countless awards over decades in business. At their Perth outpost, a customized landing page allows them to share photos, pricing and other details regarding their private dining spaces, saving the team time and bringing about a healthy uptick in inquiries.
Ossiano (Dubai, UAE)
Besides boasting one of the most stunning dining rooms we’ve ever seen, underwater restaurant Ossiano in Dubai’s Atlantis Resort is making waves with a two-night-only collaboration this weekend. Created in tandem with Chef Natsuko Shoji of Ete in Tokyo, recently awarded Asia’s Best Female Chef 2022, the 10-course dinners were offered—and quickly sold out—via the restaurant’s reservation widget, allowing them to collect prepaid revenue on every booking.
Munich Brauhaus (Sydney, Australia)
Munich Brauhaus—a boisterous Bavarian beer hall in Sydney—offers multiple prepaid reservation upgrades like schnapps, steins and pretzels on arrival as well as a giant apple strudel serving 8-10 people. Order the latter and they’ll ring the “Schnapps Bell” for you! Besides providing the opportunity for up-front revenue capture, these add-ons give guests something to get excited about, lessening the likelihood of no-shows and late cancellations.
Hilton Manchester Deansgate (Manchester, England)
The team at Hilton Manchester Deansgate is doing a masterful job merchandising the unique offerings in rooftop bar Cloud23. Optional add-ons during the booking flow include Champagne, guaranteed window seats and even a hotel stay, called “A Night in the Clouds”. Their example not only underlines the enormous power of prepaid upgrades to increase guest spend, but also demonstrates how to effectively market experiences across venues within a single property.
ICYMI: The hotel sold a staggering 43 rooms this way for Valentine’s Day 2022 alone.
Virtue Restaurant (Chicago, IL)
Chef Erick Williams of Virtue Restaurant is among the headliners in the recently-launched Capital One Dining Program, powered by SevenRooms. But cardholders aren’t the only ones whose experience can be enhanced by a well-timed table touch from the award-winning chef. In fact, the restaurant’s cleverly configured Reservation Widget has made it so that any guest can enjoy a bottle of Champagne and some quality time with Williams.
Kaliya (Santorini, Greece)
When it comes to breathtaking settings, Kaliya is hard to beat. Perched atop the tallest cliff on Santorini, the restaurant offers prime real estate for guests hoping to glimpse a fiery sunset. In fact, their tables with an unobstructed view are in such high demand that people are willing to pay a premium to sit there.
Bulgari Hotel (London, England)
The Bulgari Hotel London has just launched a very Italian riff on classic British Afternoon Tea Service, relying on SevenRooms’ white-labeled solution to keep their impeccable branding at the forefront. Executive chef Adriano Cavagnini and resident pastry chef-chocolatier Gianluca Fusto are taking the menu far beyond finger sandwiches and scones.
COTE (Miami, FL)
Michelin-starred Korean steakhouse COTE continues its Wine Club Dinner series with California’s Pax Mahle on Monday, July 18. Just nine seats are available for an evening that promises choice cuts of beef paired with “not your grandfather’s Cabernet”. With SevenRooms’ integrated ticketing and event management features, the restaurant is able to seamlessly execute these special events without interrupting nightly service.
