Ossiano (Dubai, UAE)

Besides boasting one of the most stunning dining rooms we’ve ever seen, underwater restaurant Ossiano in Dubai’s Atlantis Resort is making waves with a two-night-only collaboration this weekend. Created in tandem with Chef Natsuko Shoji of Ete in Tokyo, recently awarded Asia’s Best Female Chef 2022, the 10-course dinners were offered—and quickly sold out—via the restaurant’s reservation widget, allowing them to collect prepaid revenue on every booking.

Munich Brauhaus (Sydney, Australia)

The team at Hilton Manchester Deansgate is doing a masterful job merchandising the unique offerings in rooftop bar Cloud23. Optional add-ons during the booking flow include Champagne, guaranteed window seats and even a hotel stay, called “A Night in the Clouds”. Their example not only underlines the enormous power of prepaid upgrades to increase guest spend, but also demonstrates how to effectively market experiences across venues within a single property.
